Buckwheat Pancakes

1/2 cup buckwheat flour 

1/2 cup unbleached all purpose flour

1 tbsp cane sugar

1 tsp baking soda

1/2 tsp sea salt

1/2 tsp cinnamon 

1 tbsp oil (olive/sunflower/avocado..whatever) 

1 tbsp lemon juice

1 tsp vanilla extract

1 cup almond milk

1 tablespoon of wild :) 


Mix all ingredients togeher in a bowl, splash some oil in a cast iron and portion away! Top with real maple syrup and add fruit if you are feeling fancy. This batch normally feeds two adults and one toddler just fine. 

Serve with coffee (of course). But give your toddler milk in a coffee cup and call it coffee milk and he will think life is awesome.
