Biscuits

1 cup spelt flour

1 cup unbleached all purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon sea salt

1 teaspoon cane sugar

1 tablespoon nutritional yeast

1 tablespoon of wild :) 

1 teaspoon dried parsley

1/2 teaspoon dried basil

1/2 teaspoon dried rosemary  

1/2 cup margarine (or butter) 

3/4 cup almond milk with 1 tbsp apple cider vinegar mixed in

Combine all the above ingredients in a large bowl and mix with your hands. Squish it around until all the liquid and margarine is mixed in. Sprinkle flour on the counter and roll out the dough so it's about an inch thick. Using a large circular cookie cutter, cut as many biscuits as you can and repeat until there is no dough left (make a wild shape with the mini leftover piece) . Place biscuits on a cookie tray lined with parchment paper and bake at 450 degrees for about 10 minutes. Serve warm with butter and your favourite soup.

Notes: You can use other flours if you have them. This recipe also tastes good with 1/2 cup buckwheat flour subbed for 1/2 cup all purpose. Don't have any marg? No problem... use coconut oil!
