Neat Nancy (aka Sloppy Joe's girlfriend)

The Neat Nancy is a camp-friendly (and animal friendly) version of the American Sloppy Joe. Neat Nancys are tasty, quick, and can be served on a fresh bun or for the least-messy and more pack-able camping version, serve in a whole wheat pita (add some lettuce, butter, or mayo if you are fancy camping). 

4 cups cooked green lentils or 1 1/2- 1 3/4 uncooked (cook prior to camping or cook at the campsite - easy)

1 cup diced carrots (boil with lentils)

1/2 cup diced onions

1 package of Simply Natural Sloppy Joe seasoning (or combine the following spices: onion powder, chili flakes, garlic powder, sugar, paprika, soy sauce, pepper, cumin)

2 small cans tomato paste

1/4 cup nutritional yeast

1/4 - 1/2 cup water for desired consistency

sea salt and pepper to taste

oil for pan

1 tablespoon of wild 

Combine the cooked lentils/carrot mix with all of the other ingredients in a cast iron pan and simmer until hot and spices are absorbed (5-10 minutes). Spread some butter or mayo in your pita, add lettuce, and fill with Neat Nancy mix. Serve with salad or just eat two and a few marshmallows for dessert and you will feel oh-so-satisfied.
