Banana Peach Morning Muffins

2 bananas mashed

1 peach diced

2/3 cup wildflower honey

2/3 almond milk

1 tsp vanilla

1/2 cup coconut oil  

1 tsp xanthan gum

1 tsp sea salt

2 tsp baking soda

2 tsp baking powder

1 cup oats

1 cup spelt flour

1 tablespoon of wild 

Mix all the above ingredients together in a bowl. For best results combine the wet ingredients in a bowl and the dry ingredients in a separate bowl then mix together; however, the lazy method of mixing together all the wet then piling in all the dry and mixing the whole thing up works just fine in my books. 

Topping: 1/2 cup crushed nuts (candied or plain). I like pecans, walnuts, and cashews. Top half-way through baking time. 

Makes 12 muffins. Fill muffin cups or greased muffin tins and bake at 325 for 25-35 minutes (ready when you stick a knife in and it comes out clean). Let cool then pack in tupperware for your upcoming camping trip. (store in cooler for best results in the summer heat)
