No Bakes done 4-Ways

If you had a similar camp experience to mine... no bake cookies were a staple. You looked forward to them on out-trips as a camper and made sure there was always extra as a trip leader. In honor of my many years at YMCA Camp Kitchikewana here is a recipe for a slightly healthier take on "No-Bakes" that you can transform into 4 delicious campfire goodies. 


Top Left: The "Classic"

1/2 cup oats, 1 tbsp sugar, 1/8 tsp sea salt, 1/4 tsp vanilla, 2 tbsp chocolate chips, 1 tbsp shredded unsweetened coconut, 1 1/2 tbsp room temp (solid) coconut oil. Combine all ingredients but dont mix in the oil until you are ready to eat. 

Top Right: Fried

Take the "Classic" from your dessert the night before and fry up the leftovers to top off your morning oatmeal. This crispy, chocolaty crunch will pair wonderfully with your coffee. 

Bottom Left: Messy Peanut Butter Cookie

Take the "Classic" and add in peanut butter (my ratio was 1 tbsp PB to 4 tbsp classic... but who cares about ratios) mix it up and fry it. This slightly doughy fry is a great warm dessert option. I imagine this would taste amazing rolled around a roasted marshmallow. 

Bottom Right: Pan Cookie Classic

Again... take your "classic" add an egg and fry like a pancake. I used about 1/3 cup of classic to 1/2 egg but again... it doesn't need to be spot on. These would be a great breakfast cookie or mid morning snack cake. They are slightly sweet and would likely taste on point with a little spread of PB. 

There you have it! One standard (healthy-ish) recipe transformed 4 ways. So pack a little extra next time and use your leftovers (if you have any) to do your own take on one of the above. 

Note: the measurements would realistically be for 1(ish) person. I would recommend doubling it for 2 and so on. I was able to make everything in the picture from the amounts shown above so gauge from there.
